Following the principles of Ayurveda & Beyond, we combine digestive-supporting and warming spices with regional and seasonal vegetables that have grounding and soothing effects.
For the Ayurvedic Chestnut Soup, you will need:
- 300 grams parsnips
- 200 grams peeled chestnuts (pre-cooked)
- 2 liters vegetable broth
- 30 grams ghee (clarified butter)
- 1 teaspoon each of cinnamon, cloves, and coriander
- Salt and pepper to taste
How to Cook Chestnut Soup
The Preparation Process is as Follows:
- Start by peeling the parsnips and cutting them into rough cubes. The chestnuts should already be peeled and pre-cooked, making them easier to handle.
- Heat the ghee in a large pot until it melts and releases a light aroma.
- Add the spices to the pot and gently toast them to release their flavors.
- Once the spices are fragrant, add the parsnip cubes and peeled chestnuts. Sauté everything briefly until the vegetables become slightly translucent.
- Pour the vegetable broth into the pot and let the soup simmer on medium heat for about 20 minutes. The vegetables should be soft enough to blend easily.
- Once the parsnips are tender, use an immersion blender or a stand blender to purée the soup until it becomes smooth and creamy.
- For an especially fine texture, you can pass the soup through a sieve.
- Finally, taste the soup and season with salt and pepper. Be careful not to add too much salt so as not to overpower the delicate flavors of the spices and chestnuts.
